Pink Beetroot Pancakes

Who ever thought that having veggies for breakfast could be so much FUN ?! We love using the natural colours found in nature instead of food colouring PLUS it adds a boost of nutriton for our Active Squirtz.

Perfect for Valentine Day, Mothers Day or Pink Theme Partyz.

1 Beetroot (or tinned, 1/2 cup, pureed)

2 Tablespoons Butter, melted

1 cup Self Raising Flour

Pinch Salt

1/4 cup Sugar

1/4 tsp bicarbonate soda

150 ml milk

1 Tablespoon vinegar

1 Egg

Preheat oven to 200°C. Wrap a clean, unpeeled beetroot in foil and bake for about 45 minutes or until a skewer can easily be inserted into the flesh. Allow to cool and the beetroot skin will easly peel off. Cut into cubes and puree untill smooth. Set aside while you make the pancake batter. Add all remaining ingredients and mix unitl combined.

Place spoonfulls onto hot pan. Cook until bubbled and then turn over and cook other side.
